Paleo Pumpkin Waffles

It’s November 1st and I haven’t posted anything pumpkin this season?! What kind of crap food blog is this? We can’t have that, so I fixed it. I fixed it oh so good.

It’s Friday night which means it’s the weekend! Which means you should sleep-in, lounge in your PJs and make these waffles. I mean, do what you want. I’m not telling you what to do…except make these waffles.

You can thank someone on my hallway at work for these. I don’t know who it is, but someone makes the whole office smell like syrup every morning and my head does nothing but think about how much I need waffles. So today I dusted off our waffle maker (really, it’s probably been about 9 years since it was last used) and went to town. It took a few tries but I did it. Gluten-free, grain-free, dairy-free pumpkin waffles. I left the sugar out too. You pour enough of that on top, no need to add more in the batter.

You’re looking at fall on a plate, stacked high with dimples. You’re looking at breakfast that goes perfect with a side of lazy. You’re looking at your weekend plans… but really, do what you want.

Pumpkin Waffles (makes 4- just go ahead and double it) adapted from PaleOMG

Ingredients:
1 cup almond meal
1/2 cup pumpkin puree
1/4 cup coconut milk (I used canned, light)
3 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon pumpkin pie spice
1/4 teaspoon cinnamon
1/4 teaspoon kosher salt
Pinch of nutmeg – really, just a small pinch
Maple syrup for topping

Directions:

  1. Place all ingredients in a blender and blend until batter is combined and smooth.
  2. Pour the batter into a greased and very hot waffle iron, close and let cook through. My iron beeps when it’s done with a cooking cycle. I actually cooked mine for two cycles which was probably close to 5 minutes to get them a little crispy on the outside.
  3. Remove, let cool just a little and top with desired toppings.

Notes:

  1. You could probably use any type of milk. I used light coconut milk because that’s what we had.
  2. Make sure your waffle iron is hot enough before adding the batter. If it’s not, it might stick. Water should sizzle off if you splash it.
  3. If you don’t have a waffle iron…you can’t make waffles. Maybe try pancakes? I didn’t try, but let me know if you do.
